When first introduced, Senatore Capelli wheat was considered a life-saving discovery as its ability to produce a high quality, nutritious grain less susceptible to disease was unrivalled. It is a variety well adapted to organic farming since it grows to a prodigious height that leaves it less in contact with the ground humidity.
