What makes a wildflower honey worth seeking out is also what makes it impossible to replicate: it is, by nature, a product of a single place at a single moment in time. The Cauda hives travel each summer to high-altitude meadows in the Piedmontese Alps, where the short growing season concentrates an extraordinary density of wildflowers into just a few weeks of bloom. The bees gather from whatever is flowering (clover, thyme, cornflower, gentian, and dozens of species in between) and the result shifts year to year, meadow to meadow.
Harvested in June and July, this honey is strongly aromatic with a pleasantly floral flavor and a fine, creamy crystallization that sets it apart. That texture is a sign of quality, not age ... it means the nectar sources are diverse and the honey is unprocessed.
Cauda Miele recommends it alongside alpine cow's milk cheeses, and we'd add: a wedge of aged Comté, a slice of dark rye, a drizzle over thick yogurt. Anywhere you want something that tastes genuinely of the mountains.
