Acacia Honey

Among the great Piedmontese honeys, acacia is perhaps the most elegant. Pale as champagne, slow-pouring, and delicately sweet — the flavor carries a softness that recalls vanilla and sugared almonds, present but never assertive.

Cauda's version is harvested in May at the height of bloom, and stays liquid far longer than other varietals ... a natural quality of the nectar, not a sign of processing. Dissolves into anything, pairs beautifully with blue cheese, and earns a permanent spot on the table.
