Maraviglia Miso

Not your typical miso! Tuscan pearl barley and heirloom chickpeas are fermented together to create a uniquely Italian condiment. Perfect for seasoning meat, making salad dressings and even as a spread for sandwiches and avocado toast. Use anywhere that needs a boost of umami flavor.

Maraviglia Tamari

Tamari is the liquid equavalent of miso. When miso ferments, the maker will press the solids to yeild a a very small amount of this savory, salty sauce. For each kilogram of miso, we extract only 180 ml of tamari. We therefore invite you to experience this precious liquid as a testimony of time working its magic. Slow fermentation creates an elegant flavor complexity and allows you to elevate your dishes with this rare condiment.

In flavor, tamari is similar to soy sauce but with a more delicate salinity. Add to dressings, marinades and sauteed vegitables.

Maraviglia Shoyu:

Shoyu, or soy sauce, was developed over centuries in Asia by culturing a mixture of legumes and grains with koji spores. Agricola Maraviglia starts with growing and harvesting fresh whole chickpeas and wheat koji (a specific Japanese mold culture). Then, koji is then mixed with a brine of sea salt and water and slowly aged to develop complexity and depth of flavor before being pressed, pasteurized and bottled. 

Perfect for traditional applications of soy sauce, as well as Italian dishes, marinades and dressings.
