Sourced from the animal's fatty belly, ventresca muscle is marbled with tantilizingly thin strips of fat. Known as toro in Japanese, ventresca is satisfying and highly sought after. This tuna is best appriciated using simple preparations, such as canapés or atop a delicate bed of greens.
