Il Censo Bi-Ce-Mu Extra Virgin Olive Oil
A well balanced, organically cultivated olive oil, Il Censo is the product of three different olive varietals. The pale green Biancolilla olive contributes body and a delicate fruit flavor while the Ceresuola lends spice and distinct olive aromatics mixed with notes of almond and hay. The Murtiddara olive is truly rare and almost extinct, but when cultivated successfully, lends complexity and depth with elements of ripe pear, cut grass and green tomatoes. The resulting “BI-CE-MU” olive oil from this powerful triumvirate is a bold and delicious revelation boasting a rich golden hue – ideal on its own, for dressings and as a finishing oil.
