Althunnus Buzzonaglia Tonno Rosso
Buzzonaglia is the cut of tuna attached to the fish's central spine bone. Traditionally considered one of the less desirable cuts, it is actually extremly flavorful. Rich and bold, this tuna is worlds away from the bland, spongy fish we have become accustomed to. Because of its intense flavor and soft texture, Buzzognalia is the perfect choice for cooking. Buzzognalia pairs wonderfully with olives, capers, and sheep’s cheese.
