ANCIENT GRAIN FLOUR from Giampiero Bea
Discover Bidi Margherito, an exclusive variety of Senatore Capelli whole durum wheat cultivated by the Bea family. Senatore Capelli is a wheat that was developed by Nazareno Strampelli, an important Italian agronomist, in the early 1900s. When first introduced, Senatore Capelli wheat was considered a life-saving discovery as its ability to produce a high quality, nutritious grain less susceptible to disease was unrivalled. It is a variety well adapted to organic farming since it grows to a prodigious height that leaves it less in contact with the ground humidity. It has a brownish-black shell and the resulting milled grain is a glorious amber hue. The Farina di Bidi Margherito is excellent choice for bread, pizza and cake.
